This balanced coffee comes from the southern Colombian region of Popayan. Popayan is a very mountainous region where coffee farms are etched into the steep hills at altitudes of 1,700-2,100 meters above sea level. The soil is rich in minerals from the volcanic ash of the nearby Sotara and Purace volcanos. The high altitude results in big daily temperature variation which reduces the coffee bean ripening rhythm giving it higher levels of acidity resulting in sweet flavored coffee.
